The Australian “Vovo” Cake

Arnotts iced “Vovo” is a well-known biscuit in Australia. It was introduced in 1906 and quickly became a favorite.

Eventually, a cake was created to look like the biscuit…..

​

The cake replicates the biscuit by creating three sections: two wide outside strips of  pink frosting and a narrow strip in center of raspberry jam. Coconut is then sprinkled over the whole cake.

​

This simple little butter cake is light and delicious. And served as a favorite treat and for an “Australia  Day” gathering.

 

January 26th is Australia Day, which marks the arrival of the first fleet of Convict Ships from Great Britain and the raising of the Union Jack at Sydney Cove in 1788.
